Chardonnay: Estate Vineyard Okanagan Falls very light, sandy soil
80% of the juice ferments in French oak barrels, completes the Malolactic fermentation and ages on sur lie for another 5 month in the same barrique barrels to gain texture. The rest does the same in Stainless Steel tanks to keep the pure fruit intensity. Blended together in Spring and aged till Fall, the result is a fruity, complex yet layered wine.
The oak plays the role of a nice backdrop, so the fruit can shine in the front. Alluring aromas of nectarine and honeysuckle with flavours of Meyer lemon, savory stone fruit and a silky texture. Very much what the old wine world produces. It belongs to the new Generation of Chardonnays and is a perfect example of cold climate Chard too.
It’s a typical food wine and easy to pair. Stay on a soft spice level with your cuisine. Creamy and/or baked cheese dishes will pair great. Very nice for veal or vegetarian dishes too.
