
VINEYARD:
100% Chardonnay, 100% Estate Vineyard Okanagan Falls very light, sandy soil
WINEMAKING:
60% of the juice ferments in French oak barrels, then completes the Malolactic fermentation and ages on sur lie for another 4 months in the same barrique to gain texture. 40% is kept in stainless steel to keep the pure fruit intensity. Blended together in Spring and bottled in Fall, the result is a fruity, complex yet layered wine.
TASTING NOTES:
The oak plays the role of a nice backdrop, so the fruit can shine in the front. Alluring aromas of nectarine, honeysuckle and surprising minerality. Hints of Meyer lemon, savory stone fruit and a silky texture too. Very much what the old wine world produces. It belongs to the new Generation of Chardonnays and is a perfect example of cold climate Chard..
FOOD PAIRING:
It’s a typical food wine and easy to pair. Stay on a soft spice level with your cuisine. Creamy and/or baked cheese dishes will pair great. Very nice for veal or vegetarian dishes too.
