TASTING NOTES: Orange blossom, green pineapple, casaba melon & Asian Pear will greet your nose. Lime, candied ginger, quince, stone fruit, and green apple peel entice your tastebuds while the aftertaste reminds you a bit of lemon drops, more green apple peel and lime. The 2022 is a very zesty and refreshing style, which results in a lip smacking, fruit forward white, with the teeny-tiniest bubbles imaginable. So good.
LUNCH, BRUNCH, DINNER, BEFORE or AFTER… very easy to pair as the wine has a refreshing acidity which makes it an outstanding & exciting food wine. Be creative and use it in cocktails like a Hugo, Bellini, or Apperol spritz.

We keep and store the CO2 from the fermentation and slowly integrate that back into the wine to create small soft bubbles. No second fermentation, no traditional Champagne process, no aging on yeast, no sur lie. Without all this, the wine displays fresh fruit flavours; think of it as an uncomplicated Okanagan “Prosecco” version.
